my buddy bought a La Caja China roasting box and cooked a 60lb pig this summer. what a treat! Below are the details of how he did it! ________________________________________ Recipes used -- Caja China's Mojo sauce (on their website). Bobby Flay's cuban sauce for caja china (awful). Standard carolina BBQ sauce (vinegary) after throwing out Bobby Flay's. T-minus 24 hours - Picked up pig, stored in a plastic garbage bag with 6 bags of ice in a large, clean trash can. Pig was very fresh, still had a pretty high internal temperature. (At this point we should have injected it with the marinade. The pig was plenty moist without a brine, but it didn't get much of the mojo flavor) T-minus 9 hours -- Made Mojo injection sauce recipe. Made Bobby Flay's cuban sauce, but thought it was disgusting so threw it out. A cup of olive oil!? Bleh. Removed pig from trash can and placed on foil lined table. Injected marinade and removed eyes (Get your butcher to do this if possible). Covered with plastic trash bags and bags of ice. Internal temperature read 56 degrees, it had dropped around 20/30 degrees overnight (I was concerned it hadn't dropped more, but this was a big piece of meat). T-minus 7 hours -- Removed ice to try to bring it up to 70 degrees by the time we started cooking. T-minus 3.5 hours -- Thigh had come up to 65 degrees, close enough. As the National Day of the Chinese Communist Party (CCP) October 1st is approaching, tens of thousands of petitioners have gathered in Beijing. The CCP authorities have been on guard and have begun large-scale arrests. Scholars and experts comment that the CCP's dictatorship and its acts of cruelty will eventually drive the Chinese masses to undertake a revolution similar to the Libyan one. The Wall Street Journal's article titled " Unrest Grows as Economy Booms ", said that the unrest isn't confined to the ethnic minority areas of Tibet and Xinjiang. Many protests stem from everyday economic injustices, including land grabs by developers, abuses of power by local officials, or unpaid wages by construction firms. Zhao Yuanmin analyzed that the CCP's policy of allowing some people to be the first to get rich, has created a crop of interest groups based solely on CCP officials. Chinese Regime Censors Retired CCP Officials' Call for Freedom of Speech

The Chinese regime has censored an open letter published earlier this week calling for freedom of speech. The letter is signed by a group of former senior communist party officials and was sent to the regime's National People's Congress. It urges the de facto legislative body to dismantle the regime's censorship machine. Twenty three former senior Chinese Communist Party officials are calling on the ruling regime to allow freedom of speech and press in the country. But as soon as their letter was published, it's was removed from Chinese websites. The group of retired communist party elders, including the former publisher of the state-run People's Daily, sent the open letter on Monday to the regime's de facto legislative body. The letter urged the National People's Congress, or NPC, to uphold the constitution and abolish the country's system of censorship. The letter describes the regime's Central Propaganda Department as an "invisible black hand," and questions why it has the authority to censor recent calls by Premier Wen Jiabao for political reform. [Yu Meisun, Supporter of Open Letter]: "The Central Propaganda Department is firstly led by the Party Central, and cannot go above the Party Central. Fenugreek leaves Dal (Methi Dal or Menthi kora pappu) - Indian Vegetarian Recipe Description: This is one of the easy healthy dish and a rich source of protien for vegetarians. It tastes great when served with a dollop of ghee on hot rice, Chapathi,Phulka, Roti, Paratha. Ingredients: Toordal (Split Pigeon Peas) -1/3 cup (washed andd soaked in clean water for about 15 min) Fenugreek leaves (washed and finelu chopped) - 2 cups Red chilli powder - to taste Onion (finely chopped) - 1/2 cup Tamarind - small lime size ball Dry Red Chillies - 2 (broken into 2) Mustard seeds - 1/2 tsp Cumin seeds - 1/2 tsp Curry Leaves - 1 sprig Garlic - 1 clove(finely chopped) Salt -to taste Oil or ghee - 2 tsp Water -1 1/2 cups Procedure : Step 1 : Into a pressure cooker add the soaked dal, fenugreek leaves , onion and tamarind and add about 1 1/2 cups of water. Step 2 : Turn on the stove and pressure cook all of them till three whistles. Step 3 : Rest the Pressure cooker till all the pressure goes down by itself. Step 4 : Open the pressure cooker lid add salt and red chilli powder then again bring the entire mixture into a rolling boil. Step 5 : Mash the Dal little bit if required. Step 5 : Meanwhile let's do the seasoning. Step 6 : In a small pan add oil and turn on the heat wait till the oil is nice and hot Step 7 : Add mustard seeds wait till they start popping then add cumin seeds wait till they turn golden brown then add garlic, curry leaves, turmeric powder, red chillies and Hing Step 8 ...

Canning Green Beans part 2/3

I don't know if I said this so I'll put it in writing. When you put your jars into the canner make certain they do not touch each other or the sides of the canner. Also I often called the pressure canner a pressure cooker. These are two different things. ( My Bad) Sometimes you can buy a combination pressure cooker/pressure canner but if you can't make certain you buy a pressure CANNER.
